This virtual mussels cooking class takes you through two completely different broth worlds using the same shellfish as your starting point.
Knowing how to properly clean, inspect, and prep mussels is what separates a great result from a risky one. Get that right and everything else follows.
Jody and Kirstie will walk you through Classic Moules Marinières, the French standard built on white wine, shallots, garlic, and butter. A broth so good you will be soaking every last piece of baguette in it.
The Thai Coconut Broth goes in the opposite direction. Lemongrass, ginger, lime, and coconut milk layered into something aromatic, silky, and bright.
You will also make a quick Aioli and a sea salt infused butter and to serve alongside a warm baguette, because the broth is the point and the bread is non-negotiable.
This is the kind of weeknight dinner that looks like you worked much harder than you did. Once you have the technique, you will cook mussels on repeat.
