Our Build Your Own Tuna Poke Bowl cooking class takes you through every component from scratch, starting with the one thing most home cooks get wrong: the fish. Poke originated in Hawaii as a simple preparation of seasoned raw fish, but what made it great was never the toppings. It was always the balance.
Jody and Kirstie will walk you through how to properly select, handle, and prepare sushi-grade tuna so you feel completely confident working with raw fish at home.
From there you will learn how to build the sauce from scratch. The right balance of soy, sesame, acid, and heat is what separates a poke bowl that tastes like a restaurant from one that tastes like a guess. You will understand why each element is in the bowl and what it is doing, which means you can adjust it to your own taste every time.
The final lesson is the bowl itself. Texture, fat, acid, crunch, and heat all need to show up together. You will learn how to layer a bowl so every bite works, not just the ones with all the good stuff.
This is a lunch or quick dinner you will put on permanent rotation.
