Tacos al Pastor are the undisputed king of Mexican street food. In Mexico City, the best taquerias fire up their trompos late into the night, and locals line up long after midnight for a plate of these deeply spiced, perfectly charred tacos.

The name al pastor means "in the style of the shepherd," a quiet nod to the Lebanese lamb shawarma that inspired the dish when Middle Eastern immigrants arrived in Mexico in the early 20th century. Even the pineapple, now inseparable from the dish, remains a genuine food mystery that nobody has ever been able to fully explain.

In this class, Jody and Kirstie bring all of that history to your kitchen. You will make fresh corn tortillas from scratch, learn to marinate and cook your pork so it delivers that signature depth of flavour, and finish everything with a fresh pineapple salsa that brings the whole dish together.

Along the way you will learn why this taco is so much more than the sum of its parts and why it has captured the hearts of food lovers around the world.
