This virtual Caribbean cooking class takes you through jerk roasted fish, a fresh mango salsa, and coconut chickpeas & rice built entirely from scratch. It is a full plate with real depth, and every component teaches you something you will carry into your everyday cooking.

The jerk seasoning is where Jody and Kirstie have some fun. We keep it remarkably simple, but every spice has a job. You will learn how to balance sweet, smoky, and warming notes to get that classic jerk flavour without overcomplicating things. Once you get it, you will use this blend on everything.

The mango salsa is a lesson in contrast. Bright acidity, fresh heat, and natural sweetness are doing specific work against the jerk seasoning, and you will learn how to calibrate that balance so the salsa enhances the fish rather than competing with it.

The coconut chickpeas & rice rounds the plate out (and is almost a meal in itself!) Creamy, fragrant, and substantial enough to hold up to everything beside it.

This is a weeknight dinner that eats like a special occasion.
