Butter Tart Muffin Ingredients
Muffin Base
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp kosher salt
- 2 cups all-purpose flour
- ½ cup unsalted butter, room temperature
- 1 cup white sugar
- 2 whole eggs
- 1 cup sour cream
- 1/4 cup brown sugar
- 1/4 cup pecan pieces
Maple Butter Tart Filling
- ¼ cup unsalted butter, melted
- 1/2 cup brown sugar
- 1/3 cup corn syrup
- ¼ cup maple syrup
- 1 egg
- 1/4 tsp kosher salt
- Generous pinch of nutmeg
- Generous pinch of cardamom
Instructions
1. Preheat oven to 350°F (175°C). Line a muffin tin with muffin papers.
Make the Muffins
- In a bowl, whisk together the baking soda, baking powder, salt, and flour; set aside.
- Cream butter and white sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Gradually add the flour mixture and sour cream, alternating and beginning and ending with the dry ingredients.
- Divide the batter among the muffin cups. In a small bowl, mix together the brown sugar and pecans, then sprinkle this mixture over each muffin.
- Bake on the middle rack for 30-35 minutes, until golden and a toothpick comes out clean.
- Cool muffins in the tin for 15 minutes before transferring to a wire rack.
